Meet the Chocolatier
From Le Cordon Bleu to Lake San Marcos
D'liteful Chocolat was founded by Chef Dayleen Coleman, whose passion for the culinary arts began early and eventually led her to Le Cordon Bleu in London.
After completing her training and gaining experience in the culinary industry, Dayleen discovered a particular love for the artistry and precision of fine chocolate. She later returned to the U.S. and brought that passion to San Marcos, creating D'liteful as a place to share handcrafted chocolate, patisserie & the skills behind them.
Today, D'liteful is a chocolatier, patisserie, shop & café in Lake San Marcos, offering gourmet chocolates, pastries and year-round hands-on classes & experiences.
At D'liteful, exceptional chocolate starts long before the finishing touches. Our artisan creations are made with fine chocolate, backed by a commitment to craftsmanship, responsible cocoa sourcing & the communities behind the ingredients we use.
D'liteful combines careful craftsmanship with ethical sourcing, creating fine chocolate at our Lake San Marcos shop through skilled tempering, molding, ganache work & finishing. That commitment to quality has earned D'liteful Best of North County 2026 recognition, along with participation in the Fine Chocolate Industry Association and Make Mine Fine community. Our use of Callebaut chocolate also supports the Cocoa Horizons program and its work toward more sustainable cocoa farming.
